- 1 pound ground beef (80/20 recommended)
- 1 cup long grain white rice
- 1 ½ cups beef broth (low-sodium)
- 1 can (10.5 oz) cream of mushroom soup
- 1 ½ cups shredded cheddar cheese
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- Salt and pepper to taste
- Optional: Frozen peas, diced bell peppers, or black beans
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and break into small crumbles. Cook until no longer pink (5-7 minutes), draining excess grease but leaving about a tablespoon.
- Add diced onion to the beef and cook for 2 minutes until softened. Add minced garlic, garlic powder, onion powder, paprika, salt, and pepper. Stir constantly for 30 seconds until fragrant.
- Pour in uncooked rice and stir for 1 minute to coat in fat. Add beef broth and cream of mushroom soup, stirring to combine. Bring mixture to a boil.
- Reduce heat to low, cover tightly with a lid, and simmer for 15 minutes without lifting the lid.
- Check rice for tenderness and liquid absorption. If needed, simmer uncovered for 2-3 more minutes. Remove from heat, sprinkle cheese on top, cover, and let sit for 2 minutes to melt.
- Stir cheese in gently until creamy. Taste and adjust seasoning. Serve immediately.
Notes
Do not use instant or brown rice as cooking times differ. Ensure the lid fits tightly to trap steam. Do not stir the rice while simmering to prevent gumminess. For a richer finish, stir in a tablespoon of cold butter at the end. Leftovers can be stored in the fridge for up to 4 days or frozen for 3 months.
