Perfectly portioned, freezer-friendly breakfast burritos designed for one or two people. These meals allow you to make exactly what you need without leftovers, featuring a simple egg and sausage filling wrapped in soft flour tortillas.


Ingredients

  • 4 large eggs
  • 2 tablespoons milk or cream
  • ½ cup shredded cheddar cheese
  • 4 strips mild pork sausage (or ½ cup crumbled)
  • ¼ medium onion, finely diced
  • 1 tablespoon butter
  • Salt and pepper to taste
  • 4 large flour tortillas (10-inch)
  • Parchment paper (cut into 6×6 inch squares)

Instructions

  1. Heat a 10-inch skillet over medium heat and melt the butter.
  2. Add the sausage and cook for 3-4 minutes until browned. Add the diced onion and cook for another 2 minutes until soft. Drain excess grease if necessary.
  3. Push sausage and onions to one side (or remove to a bowl). Pour in beaten eggs mixed with milk, salt, and pepper.
  4. Let eggs sit for 10 seconds, then gently push from edges to center until mostly set but still slightly wet. Remove from heat immediately.
  5. Mix sausage and eggs together. Let the mixture cool for 2 minutes to prevent soggy tortillas.
  6. Lay out tortillas with parchment paper in the center. Divide the egg mixture evenly among the four tortillas.
  7. Sprinkle cheese on top. Fold the bottom up, fold in sides tightly, and roll up from the bottom, tucking filling in.
  8. Wrap each burrito tightly in parchment paper.
  9. Place wrapped burritos in a freezer-safe bag, squeeze out air, label with date, and freeze.

Notes

Use soft, pliable flour tortillas; corn tortillas will crack. Do not overfill the tortillas to prevent bursting. Cool the filling slightly before assembling to avoid soggy tortillas. Use parchment paper instead of plastic wrap to prevent sticking and freezer burn. Reheat in microwave with a damp paper towel, or in oven/air fryer for crispier texture.
