Description
A healthy, dairy-free dessert that comes together in under 30 minutes. This crisp features tender spiced pears topped with a crunchy, nutty oat mixture made with coconut oil for a buttery texture without the dairy.
Ingredients
Scale
- 4–5 medium Bosc or Anjou pears, peeled and sliced
- 2 tablespoons apple cider
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 2 tablespoons pure maple syrup
- 1 cup old-fashioned rolled oats
- 1/2 cup almond flour
- 1/2 cup coconut oil, melted
- 3 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup chopped pecans or walnuts (optional)
- 1/4 cup dairy-free dark chocolate chips (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish with coconut oil or non-stick spray.
- Peel and slice pears into 1/4 inch thick slices. Toss with lemon juice in a large bowl to prevent browning.
- Add apple cider, 2 tablespoons maple syrup, cinnamon, nutmeg, ginger, and a pinch of salt to the pears. Toss to coat evenly and pour into the prepared baking dish.
- In a separate bowl, whisk together rolled oats, almond flour, 1/2 teaspoon cinnamon, and sea salt.
- Melt coconut oil and 3 tablespoons maple syrup together until liquid but not hot. Pour over the dry ingredients and mix with a fork until coarse, crumbly clusters form.
- Fold in chopped nuts and/or chocolate chips if using. Spread the topping evenly over the fruit.
- Bake for 20-25 minutes until the topping is golden brown and the fruit is bubbling. If browning too quickly, tent with foil for the last 5 minutes.
- Let cool for at least 10 minutes before serving to allow the filling to set.
Notes
Choose firm pears like Bosc or Anjou to prevent mushiness. Ensure coconut oil is melted but not hot to maintain topping crunch. Letting the crisp cool for 10-15 minutes is crucial for the filling to thicken. Can be stored in the fridge for up to 4 days or frozen for up to 3 months.
