Description

Ingredients

  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 3/4 cup (180ml) buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar (for coating)
  • 2 teaspoons ground cinnamon
  • 1/4 cup (55g) unsalted butter, melted (for coating)
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a standard 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and 3/4 cup sugar until no white streaks remain.
  3. In a separate medium bowl, whisk melted butter, eggs, buttermilk, and vanilla extract.
  4. Make a well in the dry ingredients and pour in the wet mixture. Gently fold together with a spatula until just combined; do not overmix. The batter should be thick and slightly sticky.
  5. Scoop batter into muffin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes until tops are golden brown and a toothpick inserted comes out clean.
  7. While muffins are still hot, melt the 1/4 cup butter for the coating.
  8. Remove muffins from the tin and brush generously with melted butter, then roll in the mixture of 1/2 cup sugar and cinnamon until fully coated.
  9. Place coated muffins on a cooling rack to set. Serve warm.

Notes

Do not overmix the batter to avoid tough muffins. Coat the muffins while they are still warm so the sugar adheres properly. If you don’t have buttermilk, mix 3/4 cup milk with 1 tablespoon lemon juice or vinegar and let sit for 5-10 minutes. These can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
