  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter and 1 ½ cups sugar together until pale and fluffy (about 2-3 minutes with a mixer).
  4. Add the egg yolks and vanilla extract to the butter mixture and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Cover the dough and refrigerate for at least 30 minutes (or up to 24 hours).
  7. In a small bowl, mix the ½ cup sugar and 1 tablespoon cinnamon for the coating.
  8. Roll the dough into tablespoon-sized balls and coat them thoroughly in the cinnamon-sugar mixture.
  9. Place cookies on baking sheets, about 2 inches apart.
  10. Bake for 9-11 minutes, until edges are set and lightly golden but centers still look soft.
  11. Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted. Chilling the dough is crucial to prevent spreading. Underbake slightly for a chewy texture. Store in an airtight container with a slice of bread to maintain softness.
