  • 1 cup water
  • 1 large cinnamon stick (or 1 tsp ground cinnamon)
  • 45 cardamom pods, crushed (or ½ tsp ground cardamom)
  • 1-inch piece fresh ginger, sliced (or ½ tsp ground ginger)
  • 34 whole cloves (or ¼ tsp ground cloves)
  • ¼ tsp black peppercorns (or a pinch of black pepper)
  • 2 tablespoons pure pumpkin puree
  • 1.5 cups oat milk (barista-style recommended)
  • 12 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • Coconut whipped cream (optional, for topping)
  • Extra cinnamon or pumpkin pie spice (for dusting)

Instructions

  1. Brew the chai concentrate: In a saucepan, combine water and whole spices. Bring to a boil, then reduce heat and simmer for 3-4 minutes until fragrant and amber-colored.
  2. Add tea bags to the simmering water and steep for 2 minutes, then remove. If using loose leaf, strain out the spices. You should have about ¾ cup of strong chai liquid.
  3. Make the pumpkin spice milk: In the same saucepan, combine oat milk and pumpkin puree. Whisk vigorously over medium-low heat until smooth and no lumps remain (about 2 minutes). Do not let it boil.
  4. Stir in maple syrup and vanilla extract into the milk mixture.
  5. Combine: Pour the hot chai concentrate into the pumpkin milk and whisk to combine. Taste and adjust sweetness or spice levels if desired.
  6. Froth and serve: Pour into a mug. Froth remaining milk separately or froth the drink in the mug with a whisk. Top with coconut whipped cream and a dusting of cinnamon or pumpkin pie spice.
  7. Enjoy immediately while hot.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling, to avoid excess sugar. Do not boil the oat milk as it may separate; keep heat at medium-low. For a stronger flavor, toast whole spices in a dry pan for 30 seconds before adding water. The chai concentrate can be stored in the fridge for up to 3 days.
