Ingredients
- 1 large head of cauliflower (about 2–2.5 lbs / 1 kg)
- ½ cup (60g) all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ½ cup (120ml) hot sauce (e.g., Frank’s RedHot)
- 2 tablespoons vegan butter
- 1 teaspoon apple cider vinegar
- 1 small garlic clove, minced
- Vegan ranch or blue cheese dressing (for dipping, optional)
Instructions
- Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
- Wash the cauliflower and pat it completely dry with paper towels. Chop into bite-sized florets, ensuring uniform sizes for even cooking.
- In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, smoked paprika, and salt.
- Add cauliflower florets to the dry mixture and toss gently until lightly and evenly coated. Do not create a thick layer.
- Place coated florets on prepared baking sheets, ensuring they are not touching to allow for crisping.
- Bake for 20 minutes, flipping the florets halfway through (at the 10-minute mark) to ensure even browning.
- While cauliflower bakes, prepare the sauce: In a small saucepan or microwave-safe bowl, combine hot sauce, melted vegan butter, apple cider vinegar, and minced garlic. Whisk until smooth.
- Remove cauliflower from oven and increase oven temperature to 425°F (220°C).
- Pour the buffalo sauce over the hot florets and toss gently to coat evenly.
- Return to oven and bake for another 10 minutes, watching closely until the sauce is sticky and slightly caramelized.
- Serve immediately with vegan ranch or blue cheese dressing on the side.
