  • Author: Karina
  • Total Time: 45 minutes
  • Yield: 4-6 servings 1x

Description

Crispy, spicy, and sticky vegan buffalo cauliflower bites that are perfect for game day or a quick weeknight dinner. This plant-based appetizer is easy to make, budget-friendly, and loved by both vegans and meat-eaters.

Ingredients

Scale
  • 1 large head of cauliflower (about 22.5 lbs / 1 kg)
  • ½ cup (60g) all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ cup (120ml) hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons vegan butter
  • 1 teaspoon apple cider vinegar
  • 1 small garlic clove, minced
  • Vegan ranch or blue cheese dressing (for dipping, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. Wash the cauliflower and pat it completely dry with paper towels. Chop into bite-sized florets, ensuring uniform sizes for even cooking.
  3. In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, smoked paprika, and salt.
  4. Add cauliflower florets to the dry mixture and toss gently until lightly and evenly coated. Do not create a thick layer.
  5. Place coated florets on prepared baking sheets, ensuring they are not touching to allow for crisping.
  6. Bake for 20 minutes, flipping the florets halfway through (at the 10-minute mark) to ensure even browning.
  7. While cauliflower bakes, prepare the sauce: In a small saucepan or microwave-safe bowl, combine hot sauce, melted vegan butter, apple cider vinegar, and minced garlic. Whisk until smooth.
  8. Remove cauliflower from oven and increase oven temperature to 425°F (220°C).
  9. Pour the buffalo sauce over the hot florets and toss gently to coat evenly.
  10. Return to oven and bake for another 10 minutes, watching closely until the sauce is sticky and slightly caramelized.
  11. Serve immediately with vegan ranch or blue cheese dressing on the side.

Notes

[‘Pat the cauliflower thoroughly dry before coating to ensure crispiness.’, ‘Do not overcrowd the baking sheets; cook in batches if necessary.’, ‘Cornstarch is essential for the crispy texture; do not skip.’, ‘Serve immediately for best texture, as they can soften if left to sit.’, ‘Reheat leftovers in the oven or air fryer to restore crunch; do not microwave.’]
