Description

A quick and easy weeknight dinner hack featuring individual turkey meatball subs baked in a muffin tin. This recipe offers zero prep stress, individual portions for picky eaters, and is ready in under 30 minutes.


Ingredients

  • 1.5 lbs ground turkey (93% or 99% lean)
  • 1 large egg
  • 1/2 cup breadcrumbs (Panko recommended)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Cooking spray (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, combine ground turkey, breadcrumbs, egg, garlic powder, onion powder, parsley, salt, and pepper. Mix gently until combined.
  3. Roll the mixture into 12 equal-sized balls (golf ball size).
  4. Line a baking sheet with parchment paper and place meatballs on it.
  5. Par-bake meatballs for 10 minutes to ensure they are cooked through.
  6. While meatballs bake, lightly spray a standard 12-cup muffin tin with cooking spray.
  7. Place one cooked meatball into each cup of the muffin tin.
  8. Spoon about 2 tablespoons of marinara sauce over each meatball.
  9. Sprinkle shredded mozzarella generously over each meatball.
  10. Dust with grated Parmesan cheese.
  11. Place the muffin tin on a baking sheet (to catch drips) and bake for 5-7 minutes until cheese is bubbly and golden brown.
  12. Let cool in the tin for 2-3 minutes before serving.

Notes

Do not skip the par-baking step to ensure meatballs are fully cooked. For a gluten-free version, use gluten-free breadcrumbs. You can assemble these from frozen meatballs by adding 5-10 minutes to the cook time. Leftovers store in the fridge for up to 3 days.
