Ingredients
Scale
- 1.5 lbs ground turkey (93% or 99% lean)
- 1 large egg
- 1/2 cup breadcrumbs (Panko recommended)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Cooking spray (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a medium bowl, combine ground turkey, breadcrumbs, egg, garlic powder, onion powder, parsley, salt, and pepper. Mix gently until combined.
- Roll the mixture into 12 equal-sized balls (golf ball size).
- Line a baking sheet with parchment paper and place meatballs on it.
- Par-bake meatballs for 10 minutes to ensure they are cooked through.
- While meatballs bake, lightly spray a standard 12-cup muffin tin with cooking spray.
- Place one cooked meatball into each cup of the muffin tin.
- Spoon about 2 tablespoons of marinara sauce over each meatball.
- Sprinkle shredded mozzarella generously over each meatball.
- Dust with grated Parmesan cheese.
- Place the muffin tin on a baking sheet (to catch drips) and bake for 5-7 minutes until cheese is bubbly and golden brown.
- Let cool in the tin for 2-3 minutes before serving.
Notes
Do not skip the par-baking step to ensure meatballs are fully cooked. For a gluten-free version, use gluten-free breadcrumbs. You can assemble these from frozen meatballs by adding 5-10 minutes to the cook time. Leftovers store in the fridge for up to 3 days.
