  • 1 cup fresh strawberries, sliced thin
  • 3 large eggs, room temperature
  • 1/2 cup heavy cream or whole milk
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 slices thick brioche bread (1 to 1.5 inches thick)
  • 4 tablespoons unsalted butter
  • Maple syrup, for serving

Instructions

  1. In a small bowl, whisk together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  2. Cut a pocket into the side of each slice of brioche, cutting about two-thirds of the way through without cutting all the way through. Open like a book.
  3. Spread about 2 tablespoons of the cream cheese mixture into the pocket of each slice. Layer 2-3 slices of thin strawberry on top of the cream cheese. Press the bread closed gently to seal.
  4. In a shallow bowl, whisk together the eggs, heavy cream, cinnamon, nutmeg, and salt until uniform and slightly frothy.
  5. Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
  6. Dip each stuffed slice of bread into the egg wash, soaking for 10-15 seconds per side. Let excess drip off.
  7. Place the dipped bread in the hot skillet. Cook for 3-4 minutes on the first side until golden brown and crispy.
  8. Flip carefully and cook for another 3-4 minutes on the other side until the inside is heated through and the cream cheese is melted.
  9. Transfer to a plate and serve immediately with fresh strawberries, powdered sugar, and maple syrup.

Notes

Use stale brioche for best results as it holds the filling better. Keep the cream cheese filling cold until the last minute to prevent leaking. Do not crowd the pan to ensure proper browning. Reheat leftovers in a toaster oven or skillet, not a microwave, to maintain texture.
