  • 1 cup (240g) sourdough discard (active but unfed)
  • 1 ½ cups (190g) all-purpose flour
  • 4 tablespoons (55g) unsalted butter, melted
  • ½ teaspoon salt
  • 23 tablespoons everything bagel seasoning
  • Optional: Extra flaky sea salt for topping

Instructions

  1. In a large bowl, whisk together the sourdough discard and melted butter until smooth. Add the salt.
  2. Gradually add the flour and mix with a fork or hands until a shaggy dough forms. Knead in the bowl for about 30 seconds until it comes together into a ball.
  3. Wrap the dough in plastic wrap and refrigerate for 15-30 minutes to chill.
  4. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  5. Place the chilled dough between two sheets of parchment paper and roll it out as thin as possible (about 1/8 inch or less).
  6. Remove the top layer of parchment. Lightly brush the dough with water or melted butter, then generously sprinkle with everything bagel seasoning, pressing gently to adhere.
  7. Score the dough into squares or triangles using a pizza cutter. Poke each cracker a few times with a fork to prevent bubbling.
  8. Transfer the parchment paper with the dough onto the baking sheet.
  9. Bake for 12-15 minutes, rotating halfway through, until golden brown and dry.
  10. Let cool on the pan for 5 minutes, then transfer to a cooling rack to cool completely before storing.

Notes

Roll the dough as thin as possible for maximum crispiness. Do not skip the chilling step, as cold dough is easier to handle. Ensure crackers cool completely on a rack to prevent sogginess. Store in an airtight container at room temperature for up to one week. To re-crisp, bake at 350°F for 3-5 minutes.
