Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, lining bottoms with parchment paper for easy removal.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, whisk vegetable oil, granulated sugar, eggs, and 2 teaspoons vanilla until smooth.
- Gradually add dry ingredients to wet ingredients, mixing on low speed or by hand until just combined. Do not overmix.
- Fold in grated carrots, squeezed zucchini, walnuts, and raisins if using.
- Pour batter evenly into prepared pans. Bake for 25-30 minutes for round pans (or 35-40 for a 9×13 pan) until a toothpick inserted in the center comes out clean.
- Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
- While cakes cool, beat softened cream cheese and butter until smooth. Gradually add sifted powdered sugar, 1 teaspoon vanilla, and ¼ teaspoon salt. Beat on medium-high until fluffy.
- Place one cake layer on a serving plate, spread a layer of frosting, top with second layer, and frost top and sides smoothly.
