  • Author: Karina
  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Description

A quick, one-bowl vanilla bean cake that serves 4-6 people. It uses real vanilla bean paste for authentic flavor and is topped with festive sprinkles, making it perfect for last-minute celebrations.

Ingredients

Scale
  • 1 cup (120g) All-Purpose Flour
  • 3/4 cup (150g) Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup (113g) Unsalted Butter, softened
  • 2 large Eggs, room temperature
  • 2 teaspoons Vanilla Bean Paste
  • 1/2 cup (120ml) Whole Milk
  • 1/4 cup (30g) Sprinkles
  • 1/2 cup (113g) Butter, softened (for frosting)
  • 2 cups (240g) Powdered Sugar (for frosting)
  • 1 teaspoon Vanilla Extract (for frosting)
  • 12 tablespoons Milk (for frosting)
  • A pinch of Salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan with butter or cooking spray and dust with flour.
  2. In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  3. Add the softened butter and granulated sugar to the dry ingredients. Whisk until combined and resembling wet sand.
  4. Crack in the eggs one at a time, whisking well after each addition. Add the vanilla bean paste and whisk until the batter is smooth and pale.
  5. Pour in the milk and whisk until fully incorporated. The batter should be smooth and pourable.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the cake cool in the pan for 10 minutes, then flip it onto a plate or cooling rack to cool completely.
  9. While the cake cools, beat the softened frosting butter until creamy. Add powdered sugar, vanilla extract, and a pinch of salt. Beat on low until combined, then increase speed and beat for 2 minutes until fluffy.
  10. Add milk 1 tablespoon at a time to the frosting until it reaches a smooth, spreadable consistency.
  11. Spread the frosting over the cooled cake and immediately add sprinkles while the frosting is still wet.
  12. Slice and serve.

Notes

Ensure ingredients are at room temperature for best results. Do not overmix the batter to avoid a tough cake. Check the cake at 22 minutes as oven temperatures vary. Frosting should only be applied when the cake is completely cool to prevent melting. Sprinkles stick best when added immediately after frosting.
