A quick and easy weeknight dinner featuring salmon and broccoli roasted on a single sheet pan with a sweet and savory honey garlic sauce. Minimal cleanup and ready in 20-25 minutes.

- 1.5 lbs salmon fillets (wild-caught sockeye or Atlantic)
- 2 large heads broccoli florets (about 600g)
- 1 medium red bell pepper, chopped
- 1 tablespoon avocado or olive oil
- 1/3 cup honey
- 4–5 cloves garlic, minced
- 3 tablespoons low-sodium soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar or lemon juice
- 1 teaspoon sriracha or red pepper flakes (optional)
- 1 teaspoon cornstarch
- Salt and black pepper to taste
- Sesame seeds and chopped green onions for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
- Spread broccoli florets and chopped bell pepper on one side of the baking sheet. Drizzle with oil, toss to coat, and season with salt and pepper. Keep separate from the salmon area.
- In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, sriracha (if using), and cornstarch until smooth and cornstarch is dissolved.
- Pat salmon fillets dry with a paper towel and place them skin-side down on the other side of the baking sheet.
- Roast the vegetables in the oven for 5 minutes.
- Remove the pan from the oven. Pour half the sauce over the vegetables and toss to coat. Spoon the remaining sauce over the salmon fillets.
- Return the pan to the oven and roast for 10-12 minutes, or until the salmon flakes easily with a fork and is opaque throughout. The broccoli should be tender-crisp with charred edges.
- Remove from oven and let rest for 2 minutes. Garnish with sesame seeds and green onions if desired. Serve immediately.
Notes
Do not overcrowd the pan; use two sheets if necessary to ensure roasting rather than steaming. Pat the salmon dry before adding sauce for better texture. If the sauce is too runny, ensure cornstarch is fully dissolved and cook for the full time. Leftover sauce can be used as a glaze for chicken or tofu. This recipe does not freeze well.
