Ingredients
- 2 cups (250g) all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt (or ½ teaspoon if using salted butter)
- ½ cup (115g) unsalted butter, very cold and cubed
- 1 cup (100g) sharp cheddar cheese, grated
- 2 tablespoons fresh chives, chopped (or 1 teaspoon dried chives)
- ¾ cup (180ml) heavy cream or whole milk, cold
- 1 large egg yolk (optional)
- 2 tablespoons extra grated cheddar for topping
- Pinch of coarse sea salt for topping
Instructions
- Preheat oven to 425°F (220°C) and grease a 9-inch round baking pan or cast iron skillet with butter.
- In a large mixing bowl, whisk together the flour, baking powder, and salt to ensure even distribution.
- Add the cold, cubed butter to the flour mixture. Use a pastry cutter or two forks to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.
- In a separate small bowl, whisk together the heavy cream (or milk), egg yolk, and chopped chives.
- Pour the wet ingredients into the flour-butter mixture. Stir gently with a wooden spoon or spatula until the dough just comes together and looks shaggy. Do not overmix.
- Gently fold in the grated cheddar cheese.
- Turn the dough out onto a lightly floured surface and pat it into a 1-inch thick circle. Cut into 6-8 wedges or scoop into rounds for drop biscuits. Place them close together in the prepared pan.
- Sprinkle the tops with extra grated cheddar and a pinch of coarse sea salt.
- Bake for 12-15 minutes until golden brown on top and cooked through.
- Let cool in the pan for 5 minutes before serving warm.
Notes
Ensure butter is very cold to create flaky layers. Do not overmix the dough to avoid tough biscuits. Grate your own cheese for better melting. If using frozen butter, grate it directly into the flour. Store leftovers in an airtight container for up to 2 days at room temperature or up to 4 days in the fridge. Reheat in the oven to maintain crispness.
