- ½ cup (113g) unsalted butter, melted and cooled slightly
- ¼ cup (60ml) vegetable oil
- ¾ cup (150g) packed brown sugar
- ¼ cup (50g) granulated sugar
- 2 large eggs (room temperature)
- 1 teaspoon vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 ½ teaspoons pumpkin pie spice
- 1 cup (120g) powdered sugar (for glaze)
- 2 tablespoons real maple syrup (for glaze)
- 1–2 tablespoons milk (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
- In a medium bowl, mash ripe bananas with a fork until mostly smooth.
- To the bananas, add melted butter, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk vigorously until smooth and sugar is mostly dissolved.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
- Pour dry ingredients into wet ingredients. Gently fold with a spatula until just combined and no flour streaks remain. Do not overmix.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50-60 minutes. Check at 50 minutes with a toothpick; it should come out clean or with moist crumbs. If browning too fast, cover loosely with foil after 30 minutes.
- Let bread cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once cool, whisk powdered sugar, maple syrup, and milk until smooth. Drizzle over the top of the bread.
