  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons pumpkin pie spice
  • 1 cup (120g) powdered sugar (for glaze)
  • 2 tablespoons real maple syrup (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. In a medium bowl, mash ripe bananas with a fork until mostly smooth.
  3. To the bananas, add melted butter, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk vigorously until smooth and sugar is mostly dissolved.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  5. Pour dry ingredients into wet ingredients. Gently fold with a spatula until just combined and no flour streaks remain. Do not overmix.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes. Check at 50 minutes with a toothpick; it should come out clean or with moist crumbs. If browning too fast, cover loosely with foil after 30 minutes.
  8. Let bread cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cool, whisk powdered sugar, maple syrup, and milk until smooth. Drizzle over the top of the bread.
