A creamy, custard-like chia pudding that requires only five minutes of prep time and overnight chilling. It is a perfect, stress-free weeknight hack for breakfast or dessert.

- 1/2 cup (60g) chia seeds
- 1 1/2 cups milk (whole, almond, oat, or dairy-free)
- 2 teaspoons vanilla extract
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1 pinch salt
- Optional toppings: fresh berries, granola, coconut flakes, nut butter
Instructions
- In a jar or bowl, combine chia seeds, brown sugar, cinnamon, and salt. Stir to distribute spices evenly.
- Pour in the milk and stir well to ensure all chia seeds are submerged and coated.
- Vigorously whisk or stir the mixture for about one minute to prevent clumping.
- Cover the container with a lid or plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Remove from the fridge and stir again. If the mixture is too thick, add a splash of milk and stir.
- Top with desired ingredients such as berries, granola, or nut butter and serve cold.
Notes
Stir the mixture twice: once when mixing and again right before refrigerating to ensure even texture. Use cold milk for faster hydration. Do not freeze as the texture will become watery. Add crunchy toppings like granola right before eating to prevent sogginess.
