One-Pot Ground Beef Stroganoff: Smoky & Easy

Description

A quick, smoky, and creamy one-pot ground beef stroganoff cooked on the grill for added depth of flavor. This recipe is lighter than traditional versions and ready in about 25 minutes.


Ingredients

  • 1.5 lbs ground beef (80/20 fat ratio)
  • 1 medium yellow onion, diced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup full-fat sour cream
  • 1/2 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 8 oz wide egg noodles
  • Salt and black pepper to taste
  • 1 tablespoon oil or butter (for skillet)
  • Optional: 1 cup fresh cremini mushrooms, diced
  • Optional: Hot sauce to taste

Instructions

  1. Preheat grill to medium-high heat (around 400°F for charcoal). Boil water for egg noodles in a separate pot.
  2. Place a cast-iron skillet on the grill grate and let it heat for 2 minutes. Add oil or butter.
  3. Add ground beef to the hot skillet. Break it up and let it sear for a minute without stirring to develop browned bits. Drain excess grease if necessary.
  4. Add diced onion (and fresh mushrooms if using) to the beef. Sauté for 2-3 minutes until onions are translucent.
  5. Reduce grill heat to medium. Stir in beef broth, Worcestershire sauce, garlic powder, and dried parsley. Simmer for 2 minutes to meld flavors.
  6. Stir in the cream of mushroom soup until smooth. Remove skillet from direct heat temporarily and stir in sour cream to prevent curdling. Return to heat and warm through without boiling.
  7. Drain cooked egg noodles (al dente). Toss noodles into the skillet with the sauce, stirring to coat evenly.
  8. Season with salt and pepper to taste. Serve immediately, optionally garnished with fresh parsley.

Notes

Use full-fat sour cream to prevent graininess. If using a gas grill, add wood chips in a smoker box for extra smoke flavor. The sauce can be made ahead and stored in the fridge for up to 2 days; add sour cream when reheating. Do not freeze this recipe as the dairy may separate.
