  • 1.5 lbs salmon fillets (skinless, boneless)
  • 2 tablespoons olive oil
  • 45 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil, drained)
  • ½ cup chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 3 cups fresh spinach
  • ½ cup Parmesan cheese, freshly grated
  • 1 lemon, juiced
  • Salt and black pepper, to taste

Instructions

  1. Pat salmon fillets dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon for 3-4 minutes until golden, flip, and cook for 1-2 minutes more until about 70% cooked. Remove salmon and set aside.
  3. Reduce heat to medium. In the same pan, sauté minced garlic and sun-dried tomatoes for 1 minute until fragrant.
  4. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 1 minute.
  5. Add heavy cream and Italian seasoning. Simmer gently for 2-3 minutes until sauce begins to thicken.
  6. Stir in fresh spinach until wilted. Reduce heat to low and gradually sprinkle in Parmesan cheese, stirring until melted and smooth.
  7. Return salmon to the pan, nestling it into the sauce. Spoon sauce over the fish and simmer for 1-2 minutes until fish reaches an internal temperature of 145°F.
  8. Serve immediately, garnished with fresh basil or parsley and a squeeze of fresh lemon juice.

Notes

Do not overcook the salmon as it will continue to cook after removal from heat. Save the oil from the sun-dried tomatoes for extra flavor. For a richer sauce, add a tablespoon of cold butter at the end. This recipe is naturally gluten-free, but check broth labels.
