A warm, tangy, and savory German potato salad made with a bacon grease and apple cider vinegar dressing. This naturally gluten-free dish is ready in 30 minutes and pairs perfectly with bratwurst.

- 3 pounds (1.4 kg) Yellow or Yukon Gold Potatoes, cut into 1-inch cubes
- 12 ounces (340g) Thick-cut Bacon, diced
- 1 large Yellow Onion, finely diced
- 1/2 cup (120ml) Apple Cider Vinegar
- 1/2 cup (120ml) Chicken or Vegetable Broth (low-sodium)
- 1 tablespoon Dijon Mustard
- 3 tablespoons Vegetable Oil or Bacon Drippings
- 1/4 cup Fresh Parsley, chopped
- Salt and Black Pepper to taste
Instructions
- Wash potatoes and cut into 1-inch cubes. Place in a large pot, cover with cold water by an inch, and add a generous pinch of salt.
- Bring water to a boil, then reduce to a simmer. Cook for 10-15 minutes until tender but not mushy. Drain in a colander and let steam dry for a minute.
- While potatoes boil, cook diced bacon in a large skillet over medium heat until crispy. Remove bacon with a slotted spoon, leaving the grease in the pan.
- Add diced onion to the hot bacon grease. Cook for 3-4 minutes until softened and translucent.
- Whisk together apple cider vinegar, chicken broth, and Dijon mustard in the skillet with the onions. Simmer for 1-2 minutes to reduce slightly.
- Place warm potatoes in a large mixing bowl. Slowly pour the hot dressing over the potatoes while gently tossing with a wooden spoon.
- Add the cooked bacon and chopped parsley. Toss gently to combine.
- Taste and adjust salt and pepper if needed. Let rest for 10-15 minutes before serving warm.
Notes
Do not overcook the potatoes; they should hold their shape. Use the bacon grease for the dressing for maximum flavor. The salad tastes better the next day as flavors deepen. Do not freeze, as potatoes become grainy. If using Russet potatoes, be gentle when tossing to prevent mushiness.
