- 1/2 cup unsalted butter, softened
- 4–5 cloves garlic, minced
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper, freshly cracked
- Lemon wedges, for serving (optional)
Instructions
- Preheat oven to 400°F (200°C).
- If chicken breasts are unevenly thick, pound them gently to an even 1/2-inch thickness. Pat dry with paper towels.
- In a small bowl, mix softened butter, minced garlic, dried parsley, oregano, garlic powder, salt, and pepper until a uniform paste forms.
- Place chicken in a 9×13 inch baking dish. Drizzle with olive oil and rub over the chicken.
- Spread the garlic herb butter mixture generously over the top of each chicken breast.
- Bake for 18-20 minutes, or until internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for 5 minutes before serving to retain juices.
- Serve with lemon wedges and spoon pan juices over the chicken.
Notes
Pounding the chicken to an even thickness is crucial for uniform cooking. Do not skip the resting step, as it allows juices to redistribute. For dairy-free, substitute butter with olive oil or dairy-free butter. If using fresh herbs, use three times the amount of dried herbs.
