Description
A reliable, incredibly moist banana bread recipe featuring ripe bananas and melty chocolate chips. This simple weekend baking project requires only pantry staples and delivers a tender, flavorful loaf perfect for breakfast or gifting.
Ingredients
Scale
- 3 medium ripe bananas (about 1 ½ cups mashed / 350g)
- ½ cup unsalted butter (115g), melted
- ¾ cup granulated sugar (150g)
- ¼ cup light brown sugar (50g)
- 2 large eggs (100g), room temperature
- 1 teaspoon vanilla extract (5ml)
- 1 teaspoon baking soda (5g)
- ½ teaspoon salt (3g)
- 1 ½ cups all-purpose flour (190g)
- 1 cup semi-sweet chocolate chips (170g)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper for easy removal.
- In a large bowl, mash the ripe bananas until mostly smooth, leaving a few small chunks for texture.
- Stir the melted butter, granulated sugar, and brown sugar into the bananas until well combined and sugars are dissolved.
- Add the eggs and vanilla extract to the banana mixture and whisk until well combined.
- In a separate medium bowl, whisk together the flour, baking soda, and salt to ensure even distribution.
- Gradually add the dry ingredients to the wet ingredients. Use a spatula to fold them together just until the flour disappears. Do not overmix.
- Gently fold in the chocolate chips and spread the batter evenly into the prepared loaf pan.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, cover loosely with foil after 30 minutes.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use the ripest bananas possible for maximum sweetness and moisture. Do not overmix the batter to avoid a tough texture. For best results, cool completely before slicing to prevent gumminess. Can be stored at room temperature for 3 days or frozen for up to 3 months.
