Ingredients

  • 2 pounds boneless, skinless chicken breast, cut into 1.5-inch cubes
  • 2 large lemons (juice and zest)
  • ½ cup extra virgin olive oil
  • 6 cloves garlic, minced
  • 2 teaspoons dried oregano
  • ¼ cup fresh parsley, chopped
  • 1 medium red onion, cut into chunks
  • ½ cup Kalamata olives, pitted
  • ½ cup feta cheese, crumbled (optional for serving)
  • Kosher salt and freshly cracked black pepper
  • Optional: Cherry tomatoes, zucchini, or bell peppers

Instructions

  1. Cut chicken into uniform 1.5-inch cubes. Zest and juice lemons, mince garlic, and chop parsley.
  2. In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper.
  3. Add chicken cubes to the marinade, toss to coat, cover, and refrigerate for 30 minutes to 4 hours.
  4. Preheat grill to medium-high heat (400-450°F). Clean grates and oil them generously with a paper towel dipped in oil.
  5. Thread chicken onto skewers, leaving space between pieces. Alternate with red onion chunks if desired. Soak wooden skewers in water for 30 minutes prior if using.
  6. Grill skewers for 5 minutes, turn, and grill for another 5-7 minutes until internal temperature reaches 165°F.
  7. Remove from grill and let rest for 5 minutes before serving.
  8. Serve with crumbled feta, Kalamata olives, and extra lemon wedges.

Notes

Ensure chicken pieces are uniform size for even cooking. Do not overcrowd the grill to ensure proper charring. Oil the grates thoroughly to prevent sticking. Use a meat thermometer to ensure chicken reaches 165°F without drying out. Reserve a small amount of marinade before adding chicken to use as a basting sauce.
