  • ½ cup sun-dried tomatoes packed in oil (chopped)
  • 1 cup heavy cream
  • 45 cloves garlic (minced)
  • ½ cup low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Optional: Fresh basil or parsley for garnish

Instructions

  1. Pound chicken breasts to an even thickness (about ½ inch) and season generously with salt and pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken to a plate and set aside.
  3. Reduce heat to medium. Add remaining 1 tablespoon olive oil to the skillet. Add minced garlic and red pepper flakes; stir for 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes (and a splash of their oil) to the pan. Cook for 1 minute.
  5. Pour in chicken broth to deglaze the pan, scraping up brown bits from the bottom. Simmer for 2 minutes to reduce slightly.
  6. Stir in heavy cream, Italian seasoning, and Parmesan cheese. Whisk until smooth and simmer for 3-4 minutes until the sauce thickens.
  7. Nestle the seared chicken back into the sauce. Cover and simmer on low heat for 8-10 minutes, flipping halfway, until chicken reaches 165°F.
  8. Remove chicken to rest for 5 minutes. Let sauce simmer for another 2 minutes to thicken if needed.
  9. Slice chicken and serve with sauce poured over the top. Garnish with fresh basil if desired.

Notes

Pound the chicken to ensure even cooking. Do not skip searing the chicken for flavor. Save the oil from the sun-dried tomatoes for extra flavor. Keep heat medium-low when adding cream to prevent curdling. Let chicken rest before slicing to retain juices. This recipe does not freeze well due to the dairy sauce.
