- 3–4 pounds bone-in, skin-on turkey breast
- 1/2 cup unsalted butter, softened
- 1/2 cup real maple syrup (amber or dark grade)
- 2 tablespoons Dijon mustard
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Optional: Apple slices, orange zest, whiskey or bourbon
Instructions
- Preheat oven to 375°F (190°C). Remove turkey from fridge and let sit for 30 minutes. Pat dry with paper towels and rub with olive oil or softened butter.
- In a small bowl, whisk together softened butter, maple syrup, Dijon mustard, minced garlic, dried thyme, salt, and pepper until smooth.
- Place turkey in a roasting pan. Scatter apple slices at the bottom if using. Rub turkey with salt and pepper, then pour glaze over the top, spreading it evenly under the skin if possible.
- Roast for 45 minutes. Baste with pan juices. If skin browns too quickly, tent loosely with aluminum foil. Continue roasting for 15-30 minutes until internal temperature reaches 165°F (74°C).
- Remove from oven and transfer to a cutting board. Tent with foil and rest for at least 15 minutes.
- Slice against the grain and serve with pan juices or a quick pan sauce made from deglazing the pan with chicken broth.
Notes
Do not skip the resting time; it is crucial for juicy meat. Use a thermometer to avoid overcooking. If the glaze burns, tent with foil. Leftovers can be stored in the fridge for up to 4 days or frozen without the glaze.
