  • 34 pounds bone-in, skin-on turkey breast
  • 1/2 cup unsalted butter, softened
  • 1/2 cup real maple syrup (amber or dark grade)
  • 2 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: Apple slices, orange zest, whiskey or bourbon

Instructions

  1. Preheat oven to 375°F (190°C). Remove turkey from fridge and let sit for 30 minutes. Pat dry with paper towels and rub with olive oil or softened butter.
  2. In a small bowl, whisk together softened butter, maple syrup, Dijon mustard, minced garlic, dried thyme, salt, and pepper until smooth.
  3. Place turkey in a roasting pan. Scatter apple slices at the bottom if using. Rub turkey with salt and pepper, then pour glaze over the top, spreading it evenly under the skin if possible.
  4. Roast for 45 minutes. Baste with pan juices. If skin browns too quickly, tent loosely with aluminum foil. Continue roasting for 15-30 minutes until internal temperature reaches 165°F (74°C).
  5. Remove from oven and transfer to a cutting board. Tent with foil and rest for at least 15 minutes.
  6. Slice against the grain and serve with pan juices or a quick pan sauce made from deglazing the pan with chicken broth.

Notes

Do not skip the resting time; it is crucial for juicy meat. Use a thermometer to avoid overcooking. If the glaze burns, tent with foil. Leftovers can be stored in the fridge for up to 4 days or frozen without the glaze.
