Description

A kid-friendly, sweet and tangy roasted root vegetable side dish perfect for Thanksgiving. This easy recipe uses a simple maple balsamic glaze to caramelize carrots, parsnips, beets, and potatoes.


Ingredients

  • 1 pound carrots, peeled and chopped into 1-inch chunks
  • 1 pound parsnips, peeled and chopped into 1-inch chunks
  • 2 medium beets (pre-cooked or vacuum-sealed recommended), chopped
  • 1 medium red onion, cut into large chunks
  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 3 tablespoons maple syrup
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 tablespoon fresh thyme or rosemary, chopped
  • Optional: 1/2 cup walnuts or pecans

Instructions

  1. Preheat oven to 400°F (200°C). Line two large sheet pans with parchment paper.
  2. Peel and chop carrots, parsnips, potatoes, and beets into 1-inch chunks. Cut red onion into large wedges.
  3. In a small bowl, whisk together maple syrup, balsamic vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper until combined.
  4. Place all chopped vegetables in a large mixing bowl. Pour the glaze over the vegetables and toss until evenly coated.
  5. Spread vegetables in a single layer on the prepared sheet pans, ensuring they are not crowded.
  6. Roast for 30-40 minutes, tossing halfway through, until vegetables are tender and caramelized at the edges.
  7. Remove from oven, taste and adjust seasoning. Toss in optional nuts if using. Serve warm.

Notes

Do not crowd the pan to ensure vegetables roast rather than steam. Use pre-cooked beets for easier handling and to avoid staining. Uniform chunk sizes ensure even cooking. Toss vegetables halfway through roasting for even caramelization.
