Low-Carb Apple Cinnamon Mug Cake: Easy 2-Ingredient Keto Recipe

  • Author: Karina
  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Description

A fluffy, moist, and guilt-free low-carb mug cake made with almond flour and apples. Ready in under 5 minutes, this keto-friendly dessert is perfect for late-night cravings or a quick breakfast.

Ingredients

Scale
  • 1/2 cup (50g) fine almond flour
  • 1 small to medium apple, finely diced (about 1/2 cup)
  • 2 tablespoons (32g) almond butter
  • 12 tablespoons (15-30ml) heavy cream or coconut cream
  • 1/2 teaspoon ground cinnamon
  • 1 pinch nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon butter (optional, for topping)
  • 1 tablespoon chopped pecans or walnuts (optional)
  • 12 teaspoons zero-calorie sweetener (optional)

Instructions

  1. Wash and dice the apple into very small, pea-sized pieces.
  2. In a small mixing bowl, whisk together the almond flour, cinnamon, and nutmeg to break up clumps.
  3. Add the almond butter, heavy cream, vanilla extract, and diced apple to the dry ingredients.
  4. Stir until well combined; the mixture should resemble thick, moist dough.
  5. Transfer the batter to a 12-ounce microwave-safe mug, pressing it down firmly.
  6. Optionally, create a small well in the center and add a piece of butter, then sprinkle with nuts.
  7. Microwave on high for 60 seconds. Check the center; if wet, add 15-30 seconds more. Do not exceed 90 seconds.
  8. Let the cake cool in the mug for 1 minute before eating.

Notes

Dice the apple very small to ensure it cooks through. Almond flour has no gluten, so do not overmix or overcook, or the cake will become dry. Microwave wattages vary; start with 60 seconds and check frequently. For dairy-free, use coconut cream and coconut oil. For nut-free, this recipe is not easily substitutable, but sunflower seed flour can be tried with texture changes.
