Description

A quick, smoky, and spicy side dish made with fresh corn, chipotle peppers in adobo sauce, mayo, and Cotija cheese. Perfect for busy weeknights or summer gatherings.


Ingredients

  • 68 ears fresh corn on the cob (about 1.5kg)
  • 4 tablespoons butter
  • 1 teaspoon salt (to taste)
  • 23 chipotle peppers in adobo sauce (about 2 tablespoons sauce)
  • ½ cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ¼ cup fresh cilantro, chopped
  • ½ cup Cotija cheese, crumbled
  • Red pepper flakes (optional, for extra heat)
  • Sour cream (optional, to substitute half the mayo)

Instructions

  1. In a small bowl, combine mayonnaise, minced garlic, lime juice, cumin, chili powder, and 2 tablespoons of adobo sauce. Mash the chipotle peppers into the mixture until chunky. Stir until uniform in color and set aside.
  2. If boiling: Bring a large pot of salted water to a boil. Add shucked corn and boil for 5-7 minutes until tender but crisp. Drain and pat dry. If grilling: Preheat grill to medium-high. Grill corn for 10-12 minutes, turning occasionally, until charred in spots.
  3. While the corn is hot, brush each ear generously with melted butter.
  4. Spread the chipotle mayo mixture thickly over each ear of corn, ensuring it gets into the crevices.
  5. Immediately sprinkle with crumbled Cotija cheese and chopped cilantro. Serve with extra lime wedges on the side.

Notes

Use fresh lime juice and fresh garlic for best flavor. The adobo sauce from the chipotle can is liquid gold; save the rest for other recipes. Cotija cheese can be substituted with feta or parmesan if unavailable. For a lighter version, substitute Greek yogurt for mayonnaise. This dish is naturally gluten-free.
