  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 cup bourbon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup old-fashioned oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (for topping)
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a large bowl, toss frozen peaches with granulated sugar, cornstarch, 1 teaspoon cinnamon, bourbon, vanilla extract, and lemon juice until coated.
  3. Pour the peach mixture into the prepared baking dish and spread evenly.
  4. In a separate medium bowl, whisk together flour, brown sugar, oats, salt, and 1/2 teaspoon cinnamon.
  5. Add cold cubed butter to the dry ingredients and use a fork to cut it in until the mixture resembles coarse crumbs with pea-sized butter chunks.
  6. Sprinkle the crumble topping evenly over the peaches without pressing down.
  7. Bake for 45 minutes, then check the topping. If browning too quickly, tent loosely with aluminum foil.
  8. Continue baking for 10-15 more minutes until the topping is golden brown and the peach filling is bubbling vigorously.
  9. Remove from oven and let cool for at least 15 minutes to allow the sauce to thicken.
  10. Serve warm with vanilla ice cream.

Notes

Frozen peaches work perfectly and create a richer sauce than fresh ones. Do not skip the cooling time, as the sauce needs to set. If using fresh peaches, add an extra tablespoon of cornstarch. The alcohol in the bourbon cooks off, leaving only flavor.
