Ingredients
- 4 thick-cut pork chops (about 1.5 lbs / 700g)
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter (divided)
- 6–8 cloves garlic, minced
- 1 teaspoon dried Italian seasoning (or mix of thyme and oregano)
- 1 teaspoon kosher salt (plus more to taste)
- Cracked black pepper (to taste)
- 1 teaspoon lemon juice (optional)
- 1 tablespoon fresh parsley, chopped
- ½ teaspoon red pepper flakes (optional)
Instructions
- Pat the pork chops dry with paper towels to ensure a good sear. Season both sides generously with salt and pepper.
- Heat a large skillet (preferably stainless steel or cast iron) over medium-high heat. Add olive oil and let it shimmer.
- Place pork chops in the skillet without crowding. Cook for 3-4 minutes on the first side without moving them to form a golden crust.
- Flip the chops and cook for another 3-4 minutes, or until the internal temperature reaches 145°F (63°C). Remove chops from the pan and set aside on a plate to rest.
- Reduce heat to medium-low. Add 4 tablespoons of butter to the same skillet. Once melted and foaming, add minced garlic and dried Italian seasoning.
- Stir constantly for 30-60 seconds until garlic is fragrant and light golden. Do not let it burn.
- Return pork chops to the skillet, spooning the garlic butter sauce over the top. Let sit for 30 seconds.
- Squeeze lemon juice over the chops if using. Garnish with fresh parsley and red pepper flakes. Serve immediately.
Notes
Patting the chops dry is crucial for a good sear; wet meat will steam. Do not move the chops while searing to allow the crust to form. Use a meat thermometer to avoid overcooking; pull at 140°F as they will rest to 145°F. If using boneless chops, reduce cooking time by 1-2 minutes per side. For a creamy variation, add ¼ cup heavy cream to the sauce.
