  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter (divided)
  • 68 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning (or mix of thyme and oregano)
  • 1 teaspoon kosher salt (plus more to taste)
  • Cracked black pepper (to taste)
  • 1 teaspoon lemon juice (optional)
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Pat the pork chops dry with paper towels to ensure a good sear. Season both sides generously with salt and pepper.
  2. Heat a large skillet (preferably stainless steel or cast iron) over medium-high heat. Add olive oil and let it shimmer.
  3. Place pork chops in the skillet without crowding. Cook for 3-4 minutes on the first side without moving them to form a golden crust.
  4. Flip the chops and cook for another 3-4 minutes, or until the internal temperature reaches 145°F (63°C). Remove chops from the pan and set aside on a plate to rest.
  5. Reduce heat to medium-low. Add 4 tablespoons of butter to the same skillet. Once melted and foaming, add minced garlic and dried Italian seasoning.
  6. Stir constantly for 30-60 seconds until garlic is fragrant and light golden. Do not let it burn.
  7. Return pork chops to the skillet, spooning the garlic butter sauce over the top. Let sit for 30 seconds.
  8. Squeeze lemon juice over the chops if using. Garnish with fresh parsley and red pepper flakes. Serve immediately.

Notes

Patting the chops dry is crucial for a good sear; wet meat will steam. Do not move the chops while searing to allow the crust to form. Use a meat thermometer to avoid overcooking; pull at 140°F as they will rest to 145°F. If using boneless chops, reduce cooking time by 1-2 minutes per side. For a creamy variation, add ¼ cup heavy cream to the sauce.
