Description

Rich, custard-like egg bites infused with hickory smoke, featuring cream cheese, cheddar, crispy bacon, and wilted spinach. A low-carb, high-fat breakfast that is perfect for keto diets and meal prep.

  • 4 large eggs, room temperature
  • 1/4 cup heavy cream
  • 4 oz full-fat cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 4 strips thick-cut bacon, cooked crispy and crumbled
  • 1 cup fresh spinach, wilted and chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon kosher salt
  • Black pepper to taste
  • Cooking spray

Instructions

  1. Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble into small pieces.
  2. In the same skillet, wilt fresh spinach for 2-3 minutes until all excess water has evaporated. Chop roughly and set aside.
  3. In a blender, combine eggs, heavy cream, softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and pepper. Blend on high until completely smooth with no lumps.
  4. Lightly spray silicone muffin cups with cooking spray. Divide the egg mixture evenly among the cups, filling them about 3/4 full.
  5. Top each bite with crumbled bacon and a pinch of wilted spinach, pressing them slightly into the mixture.
  6. Preheat pellet or gas smoker to 225°F (107°C) and add wood pellets (hickory, apple, or cherry).
  7. Place the muffin tin with silicone cups on the smoker grate. Smoke for 25-30 minutes until the eggs are set but slightly jiggly in the center and reach an internal temperature of 160°F (71°C).
  8. Remove from smoker and let cool in the tin for 5 minutes before gently popping them out of the silicone cups.
  9. Serve warm or chill for later consumption.

Notes

Ensure spinach is fully wilted and drained to prevent watery egg bites. Use full-fat block cream cheese for the best texture. Do not overcook; eggs will firm up as they cool. Can be eaten warm or cold.
