Description

Ingredients

  • 2 teaspoons (4g) culinary grade matcha powder
  • 2 ounces (60ml) hot water (175°F / 80°C)
  • 1 teaspoon (5ml) honey or maple syrup
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon (5ml) vanilla bean paste or high-quality vanilla extract
  • Pinch of salt
  • 1 cup (240ml) milk of choice (whole, oat, almond, or soy)
  • 1 cup (80g) ice cubes
  • Optional: Extra matcha powder for dusting
  • Optional: Whipped cream for topping

Instructions

  1. In a small bowl, combine heavy cream, vanilla bean paste, and a pinch of salt. Whisk vigorously until smooth and pourable (not stiff). Refrigerate until ready to use.
  2. Sift the matcha powder into a wide bowl using a sieve to remove clumps.
  3. Pour the hot water (175°F) over the matcha and add honey or maple syrup.
  4. Whisk the mixture using a ‘W’ motion with a bamboo whisk for 15-20 seconds until a frothy, smooth paste forms.
  5. Fill a tall glass with ice cubes.
  6. Pour the milk over the ice, leaving about an inch of space at the top.
  7. Slowly pour the whisked matcha paste over the ice and milk to create layers.
  8. Whisk the chilled vanilla cream briefly to loosen it, then spoon or pour it over the top of the matcha latte.
  9. Garnish with a light dusting of matcha powder if desired.
  10. Serve immediately with a wide straw.

Notes

Water temperature is critical; do not use boiling water as it burns the matcha and makes it bitter. The vanilla cream can be made up to a week ahead and stored in the fridge. The matcha paste should always be made fresh to maintain color and flavor. For a dairy-free version, swap heavy cream for coconut cream and milk for canned coconut milk.
