- 2 cans (15 oz each) chickpeas, rinsed and drained
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 2–3 tablespoons Sriracha
- 3 tablespoons honey
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds
- 1–2 green onions, sliced
- Red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Rinse chickpeas in a colander and pat them completely dry using paper towels. This step is crucial for crispiness.
- In a small bowl, whisk together olive oil, Sriracha, honey, soy sauce, sesame oil, and garlic powder.
- Place dried chickpeas in a large mixing bowl and pour the sauce over them. Toss well to coat evenly.
- Line two large baking sheets with parchment paper. Spread chickpeas in a single layer, ensuring they are not crowded.
- Roast for 15 minutes, then remove and stir with a spatula.
- Return to oven and roast for another 5-7 minutes until golden brown and crispy. Watch closely to prevent burning.
- Remove from oven and let cool on the baking sheets for 5 minutes to crisp up further.
- Toss with sesame seeds and sliced green onions before serving.
Notes
Ensure chickpeas are thoroughly dried before roasting to achieve maximum crispiness. Do not crowd the baking sheets; roast in batches if necessary. Honey can burn easily, so watch the chickpeas closely in the last few minutes. Store leftovers in an airtight container at room temperature for up to 5 days. If they lose crunch, re-crisp in a 350°F oven for 5 minutes.
