Ingredients

  • 1/2 cup pumpkin puree (100% pure, not pie filling)
  • 1/4 cup maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups strong coffee or cold brew concentrate
  • 1 cup milk (whole, oat, or almond)
  • 1/4 cup heavy cream (optional, for topping)
  • 1/2 teaspoon vanilla extract
  • Whipped cream (for topping)
  • Nutmeg (freshly grated, for garnish)
  • Ice (for iced version)

Instructions

  1. In a small saucepan over medium heat, combine pumpkin puree, water, maple syrup, pumpkin pie spice, and cinnamon.
  2. Whisk constantly to prevent clumping and burning. Simmer gently for about 5 minutes until the mixture thickens slightly and becomes smooth.
  3. Remove from heat and let the syrup cool for a few minutes. Optionally blend for extra smoothness.
  4. Brew strong coffee or cold brew concentrate. If using hot coffee, let it cool to room temperature.
  5. Heat milk in a microwave-safe jug or saucepan until steaming hot (do not boil).
  6. Froth the milk using a handheld frother or by shaking in a sealed jar until foamy.
  7. Fill a mug halfway with the cooled coffee.
  8. Add 2-3 tablespoons of the pumpkin spice syrup to the coffee and stir well.
  9. Pour the frothed milk over the coffee, holding back foam with a spoon, then scoop foam on top.
  10. For whipped cream topping, whip heavy cream with vanilla and powdered sugar until stiff peaks form, then dollop on top.
  11. Garnish with extra cinnamon and freshly grated nutmeg. Serve immediately.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling, to control sweetness and spice levels. Cold brew concentrate provides a smoother, less acidic base. The syrup can be made ahead and stored in the fridge for up to two weeks. For an iced latte, froth cold milk and pour over ice.
