High-Protein Peanut Butter Overnight Oats

Description

A simple, no-cook breakfast recipe that requires only 5 minutes of prep time. These oats are packed with protein, keep you full until lunch, and are perfect for meal prepping.


Ingredients

  • 1 cup rolled oats (old-fashioned)
  • 1 cup milk (dairy or plant-based)
  • ½ cup Greek yogurt (plain, non-fat or 2%)
  • 1 scoop vanilla or unflavored protein powder
  • 2 tablespoons peanut butter (creamy or natural)
  • 12 teaspoons honey or maple syrup
  • 1 teaspoon chia seeds
  • ½ teaspoon cinnamon
  • Optional toppings: banana slices, mini chocolate chips, granola, extra peanut butter

Instructions

  1. Label 4-6 glass jars with lids.
  2. Add ½ cup rolled oats and 1 teaspoon chia seeds to each jar.
  3. Add half a scoop of protein powder to each jar (add dry to prevent clumping).
  4. Pour ½ cup milk into each jar.
  5. Add ¼ cup Greek yogurt to each jar and stir gently to mix.
  6. Drop 1 tablespoon of peanut butter into each jar; do not stir fully in yet to create flavor pockets.
  7. Add honey/maple syrup and cinnamon.
  8. Seal jars tightly and shake vigorously to distribute ingredients.
  9. Refrigerate for at least 4 hours, ideally overnight (8-12 hours).
  10. In the morning, stir well. Add a splash of milk if too thick.
  11. Top with desired toppings and serve cold or microwave for 60-90 seconds if preferred warm.

Notes

Do not use instant or steel-cut oats as they will not achieve the correct texture. For best results, add protein powder to the dry oats first to prevent clumping. Shake the jar vigorously to ensure even distribution. Oats can be stored in the fridge for up to 5 days.
