Ingredients

  • 3 cups shredded rotisserie chicken
  • 1/2 cup (120g) full-fat or 2% plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 cup red seedless grapes, halved
  • 2 stalks celery, diced
  • 2 tablespoons fresh dill, chopped
  • 2 green onions, sliced
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup walnuts or pecans, chopped
  • Optional: 1/4 cup dried cranberries
  • Optional: 2 tablespoons bacon bits

Instructions

  1. Shred the rotisserie chicken and place it in a large mixing bowl.
  2. Wash and halve the grapes, then set aside.
  3. In a small bowl or directly in the large bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  4. Pour the dressing over the shredded chicken and toss gently to coat evenly.
  5. Add the halved grapes, diced celery, sliced green onions, and chopped dill to the bowl.
  6. Fold everything together until well combined.
  7. For best flavor, chill in the refrigerator for 15 minutes before serving. Serve over greens, on toast, or in lettuce cups.

Notes

Use full-fat or 2% Greek yogurt for the best creamy texture; non-fat yogurt can make the salad watery. Keep grapes cold until serving for added crunch. This salad keeps in the fridge for up to 4 days. Do not freeze as the yogurt will separate. For a low-carb version, skip the grapes and serve in lettuce cups.
