Description

Creamy, high-protein egg bites made with blended cottage cheese for a smooth texture without a sous vide machine. These savory bites are packed with protein, easy to meal prep, and perfect for a quick breakfast.


Ingredients

  • 1 cup (225g) full-fat cottage cheese
  • 4 large eggs
  • 2 large egg whites (or ¼ cup liquid egg whites)
  • ½ cup (50g) shredded mozzarella cheese
  • 1 cup packed fresh spinach (about 30g)
  • ¼ cup (30g) crumbled feta cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt (or to taste)
  • Black pepper (to taste)
  • Olive oil or cooking spray (for greasing)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Add cottage cheese to a high-speed blender and blend on high for 30-60 seconds until completely smooth with no visible curds.
  3. Add eggs, egg whites, mozzarella, garlic powder, salt, and pepper to the blender. Pulse briefly until just combined into a uniform liquid.
  4. Pour the mixture into a bowl and fold in the fresh spinach and crumbled feta cheese.
  5. Grease a 12-cup muffin tin generously with olive oil or cooking spray.
  6. Fill each muffin cup about ¾ full with the egg mixture.
  7. Cover the muffin tin loosely with aluminum foil.
  8. Bake for 25-30 minutes until centers are just set but still have a slight jiggle.
  9. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before removing.

Notes

Blend the cottage cheese first to ensure a smooth texture. Do not overfill the cups as eggs expand during baking. For extra creaminess, you can use a water bath by placing the muffin tin in a larger roasting pan filled with an inch of hot water. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
