- 1 cup (90g) old-fashioned rolled oats
- 1 cup (240g) cottage cheese (full-fat or 2%)
- 1 large egg
- 1/2 cup (120ml) milk (almond, oat, or dairy)
- 2 tablespoons (30ml) maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup (75g) wild blueberries (fresh or frozen)
- 2 tablespoons (15g) chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease four 6-ounce ramekins or an 8×8 inch baking dish.
- In a mixing bowl, combine cottage cheese, egg, milk, maple syrup, and vanilla extract. Whisk or mash vigorously until the mixture is smooth and creamy.
- Add rolled oats, baking powder, cinnamon, and salt to the wet ingredients. Stir until well combined.
- Let the batter sit for 5 minutes to allow the oats to soften.
- Gently fold in the wild blueberries and nuts (if using). If using frozen berries, toss them in a teaspoon of flour first to prevent sinking.
- Divide the batter evenly among the ramekins or pour into the baking dish.
- Bake for 20-25 minutes for ramekins, or 30-35 minutes for a large dish, until the tops are golden brown and slightly set.
- Let cool for 5 minutes before serving. Serve warm with extra maple syrup or yogurt.
Notes
Do not use quick oats or steel-cut oats as they affect the texture. Let the batter rest for 5 minutes before baking to ensure the oats absorb liquid properly. If using frozen berries, do not thaw them first. For a smoother texture, blend the cottage cheese with wet ingredients before adding oats.
