Ingredients
- 1 ½ cups old-fashioned rolled oats
- ½ cup creamy peanut butter
- 3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- ½ cup protein powder (vanilla whey or plant-based)
- ½ cup chocolate chips (semi-sweet or milk)
- Pinch of sea salt (optional)
Instructions
- Pulse the rolled oats in a food processor or blender for 10-15 seconds until coarsely ground (optional, for smoother texture).
- In a large mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir until smooth and glossy.
- Add the ground oats and protein powder to the wet mixture. Stir vigorously with a spatula until the dough comes together. If too dry, add a teaspoon of milk or water.
- Fold in the chocolate chips gently until evenly distributed.
- Using a cookie scoop or tablespoon, portion the dough into 1-inch balls and roll between palms to smooth.
- Place the bites on a baking sheet lined with parchment paper.
- Chill in the freezer for 30 minutes to firm up.
- Transfer to an airtight container and store in the fridge or freezer.
Notes
Do not use instant or steel-cut oats; old-fashioned rolled oats provide the best texture. If using natural peanut butter with separated oil, stir well before measuring. Different protein powders absorb moisture differently, so adjust liquid content as needed. For a vegan version, use plant-based protein powder, maple syrup, and dairy-free chocolate chips.
