  • 1 cup (200g) Granulated Sugar
  • 2 large Eggs, room temperature
  • 2 teaspoons Vanilla Extract
  • ½ cup (120ml) Gluten-Free Milk (e.g., almond or oat milk)
  • 12 teaspoons Purple Gel Food Coloring
  • 8 oz (225g) Cream Cheese, softened
  • ½ cup (115g) Butter, softened
  • 34 cups (360-480g) Powdered Sugar, sifted
  • 1 teaspoon Vanilla Extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together gluten-free flour blend, almond flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar until light and fluffy (3-4 minutes).
  4. Add eggs one at a time, beating well after each addition. Stir in 2 teaspoons vanilla extract.
  5. Add half of the dry ingredients to the butter mixture, mixing on low. Add milk and mix until combined. Add remaining dry ingredients and mix until just combined. Do not overmix.
  6. Add purple gel food coloring and mix until the batter is evenly colored.
  7. Divide batter evenly among cupcake liners (about ⅔ full).
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cupcakes cool, beat cream cheese and ½ cup butter until smooth. Gradually add powdered sugar, then 1 teaspoon vanilla. Beat until fluffy.
  10. Frost cooled cupcakes with cream cheese frosting. Store in the refrigerator.

Notes

Use gel food coloring instead of liquid to prevent gummy texture. Ensure all ingredients are at room temperature for best emulsification. Do not overmix the batter. Cupcakes must cool completely before frosting to prevent melting. Store in the refrigerator due to cream cheese frosting.
