  • 68 oz (170-225g) lean ground turkey (93% lean)
  • 1/2 medium yellow onion, diced
  • 1 small sweet potato (about 1/2 lb / 225g), peeled and diced into 1/2-inch cubes
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 cup (60ml) chicken or vegetable broth
  • 1/2 cup (120g) diced tomatoes, drained
  • 2 tablespoons fresh cilantro, chopped
  • 1 wedge lime, for serving

Instructions

  1. Prep ingredients: Dice sweet potato into 1/2-inch cubes, dice half the onion, mince garlic, and measure spices.
  2. Heat olive oil in a 10-inch non-stick skillet over medium-high heat.
  3. Add ground turkey and diced onion. Break turkey into small crumbles with a spatula. Cook for 5-6 minutes until turkey is no longer pink and onions are translucent. Drain excess fat if necessary.
  4. Add diced sweet potatoes to the skillet. Sprinkle smoked paprika, cumin, chili powder, and salt over the mixture. Stir to coat and cook for 3 minutes until spices are fragrant.
  5. Pour in chicken broth and drained diced tomatoes. Stir to scrape up browned bits from the bottom of the pan.
  6. Reduce heat to medium-low. Cover the skillet with a lid or foil and simmer for 5-7 minutes until sweet potatoes are tender when pierced with a fork.
  7. Remove lid. If excess liquid remains, cook uncovered for 1-2 minutes to evaporate.
  8. Taste and adjust salt if needed. Turn off heat and stir in fresh cilantro.
  9. Serve immediately with a squeeze of fresh lime juice. Top with avocado or feta cheese if desired.

Notes

Ensure sweet potatoes are cut into uniform 1/2-inch cubes to cook evenly. Do not skip the broth as it helps steam the potatoes. Drain canned tomatoes well to prevent a soupy texture. This recipe is naturally gluten-free, but check labels on broth and spices if you have celiac disease. Sweet potatoes do not freeze well; store leftovers in the fridge for up to 3 days.
