Description

  • 1.5 lbs ground beef (80/20 fat ratio)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 lbs yellow potatoes (Yukon Gold), cut into ½-inch cubes
  • 4 cups chicken broth (low-sodium)
  • 2 cups sharp cheddar cheese, shredded
  • ½ cup heavy cream (optional)
  • 2 tablespoons pickle relish
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • Pinch of paprika

Instructions

  1. Heat a large Dutch oven or stockpot over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Season with salt, pepper, garlic powder, and paprika. Cook until browned and no longer pink (5-7 minutes).
  2. Drain most of the fat, leaving about 1 tablespoon in the pot.
  3. Reduce heat to medium. Add diced onion and cook for 3-4 minutes until soft and translucent.
  4. Add minced garlic and pickle relish. Stir constantly for 1 minute until fragrant.
  5. Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add cubed potatoes.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are tender.
  7. Stir in heavy cream (if using) and heat through for 1-2 minutes. Do not boil.
  8. Remove pot from heat. Gradually add shredded cheddar cheese, stirring constantly until melted and smooth.
  9. Taste and adjust seasoning with salt and pepper if needed.
  10. Ladle into bowls and serve with optional toppings like bacon bits, chives, or sour cream.

Notes

Shred your own cheese to prevent graininess. Always remove the pot from heat before adding cheese to ensure smooth melting. Use Yukon Gold potatoes for best texture. This soup is naturally gluten-free if using gluten-free broth. Do not freeze as dairy and potatoes do not freeze well.
