Description
Soft, pillowy cookies made from refrigerated cinnamon roll dough, stuffed with a molten brown sugar and cinnamon center, and topped with a tangy cream cheese icing. Ready in just 25 minutes.

- 1 tube (16.3 oz) refrigerated cinnamon roll dough
- 2 tablespoons unsalted butter, melted
- ½ cup granulated sugar
- 2 teaspoons ground cinnamon
- ¼ cup light brown sugar, packed
- ¼ cup chopped pecans or walnuts (optional)
- 4 oz block cream cheese, softened
- 1 cup powdered sugar, sifted
- ½ teaspoon vanilla extract
- 1–2 teaspoons milk or cream
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Open the cinnamon roll dough tube and separate the rolls. If rolls are large, cut them in half for smaller cookies.
- Flatten each dough piece slightly. Sprinkle a teaspoon of brown sugar and a pinch of cinnamon in the center.
- Fold the dough over the filling, pinching edges to seal. Roll into balls to smooth cracks. Place on baking sheets, leaving 2 inches between each.
- Optional: Chill the sealed dough balls on the baking sheet for 10 minutes to help them hold shape.
- Brush the tops of the cookies lightly with melted butter.
- In a small bowl, mix granulated sugar and ground cinnamon. Roll each cookie in this mixture to coat fully.
- Bake for 12-15 minutes, or until edges are golden brown and centers are puffed. Do not overbake.
- While cookies bake, whisk softened cream cheese until smooth. Add powdered sugar, vanilla, and salt. Whisk until combined.
- Add milk one teaspoon at a time to the icing until it reaches a drizzle-able consistency.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Drizzle the cream cheese icing over the completely cooled cookies.
Notes
Do not use whipped cream cheese for the icing; use block cream cheese. Ensure cookies are completely cool before icing to prevent melting. For best texture, eat the same day. Can freeze unbaked dough balls for up to 1 month.
