Description

Ingredients

  • 3 large sweet potatoes (about 1.5 lbs / 680g)
  • 45 cloves garlic, minced
  • ½ cup freshly grated parmesan cheese (50g)
  • 2 tablespoons olive oil
  • 1 tablespoon butter, melted
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon salt (or to taste)
  • Fresh chopped parsley or chives for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a standard half-sheet baking pan with parchment paper or aluminum foil.
  2. Wash sweet potatoes thoroughly. Cut them in half lengthwise, then slice each half into ½-inch to ¾-inch thick wedges, aiming for uniform size.
  3. Place wedges in a large mixing bowl. Drizzle with olive oil and melted butter. Sprinkle with garlic powder, onion powder, smoked paprika, black pepper, and salt. Toss until evenly coated.
  4. Spread wedges in a single layer on the baking sheet, ensuring they are not touching to allow for crispiness.
  5. Bake for 15 minutes without disturbing the potatoes.
  6. Remove pan from oven. Sprinkle freshly grated parmesan evenly over the potatoes. Gently flip the wedges over with a spatula.
  7. Return to oven and bake for another 10-15 minutes, or until potatoes are tender when pierced with a fork and cheese is golden brown and bubbly.
  8. Remove from oven and let cool for 2-3 minutes to allow cheese to set. Garnish with fresh herbs if desired and serve immediately.

Notes

Do not crowd the pan; potatoes need space to roast rather than steam. Grate your own parmesan cheese as pre-grated cheese contains anti-caking agents that prevent proper melting and crisping. Use fresh garlic for best flavor. If your pan is small, use two sheets to ensure even cooking.
