Ingredients

  • Water (for boiling)
  • 1 tablespoon Salt (for boiling water)
  • 3 tablespoons Extra Virgin Olive Oil
  • 56 cloves Garlic, minced
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Dried Thyme
  • 1/2 teaspoon Paprika
  • 3/4 cup Parmesan Cheese, freshly grated
  • 2 tablespoons Fresh Parsley, chopped
  • 1/2 teaspoon Black Pepper, freshly cracked

Instructions

  1. Peel potatoes (optional) and cut into 1-inch cubes.
  2. Fill a large pot with water, add 1 tablespoon salt, and bring to a rolling boil.
  3. Add potato cubes and parboil for 8-10 minutes until tender on the outside but firm in the center.
  4. Drain potatoes in a colander and let sit for 2-3 minutes to steam off excess water.
  5. Transfer hot potatoes back to the pot or a large bowl. Add a splash of cold water and shake vigorously for 10 seconds to rough up the exterior.
  6. In a large mixing bowl, combine olive oil, minced garlic, dried oregano, dried thyme, paprika, and black pepper.
  7. Add potatoes to the oil mixture and toss gently until evenly coated.
  8. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  9. Spread potatoes in a single layer on the baking sheet, ensuring they are not crowded.
  10. Roast for 20 minutes, then flip potatoes and sprinkle half of the Parmesan cheese over them.
  11. Return to oven and roast for another 10-15 minutes until golden brown and crispy.
  12. Remove from oven and immediately sprinkle remaining Parmesan and fresh parsley over the hot potatoes.
  13. Toss gently and serve immediately.

Notes

Do not skip the parboiling step as it ensures a crispy exterior and fluffy interior. Ensure potatoes are not crowded on the baking sheet to prevent steaming. For best results, grate Parmesan cheese yourself rather than using pre-grated varieties. Leftovers can be stored in the refrigerator for up to 4 days and reheated in the oven or air fryer to restore crispiness.
