Description

Ingredients

  • 1.5 pounds sirloin or ribeye steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 2 tablespoons high smoke point oil (avocado, canola, or vegetable)
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 large Yukon Gold potatoes, diced into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Dice potatoes into 1-inch cubes and toss with olive oil, dried oregano, dried parsley, garlic powder, and salt.
  3. Spread potatoes in a single layer on a baking sheet and roast for 20-25 minutes, flipping halfway, until golden and crispy. Keep warm in the oven.
  4. Pat steak cubes completely dry with paper towels and season generously with salt and pepper.
  5. Heat oil in a large skillet over medium-high heat until shimmering.
  6. Sear steak bites in a single layer for 2-3 minutes per side until browned and cooked to desired doneness. Cook in batches if necessary to avoid overcrowding.
  7. Reduce heat to medium, add butter to the pan, and melt. Add minced garlic and dried herbs, stirring for 30-60 seconds until fragrant.
  8. Pour garlic butter over steak and toss to coat.
  9. Serve immediately over or alongside the roasted potatoes.

Notes

Pat the steak dry before cooking to ensure a good sear. Do not overcrowd the pan when searing steak or roasting potatoes, as this causes steaming instead of browning. For best results, use Yukon Gold potatoes. If using fresh herbs, add them at the end of cooking to prevent burning.
