  • 1 package instant ramen noodles (chicken or beef flavor), seasoning packet reserved
  • 2 tablespoons (30g) unsalted butter
  • 34 cloves garlic, minced
  • 2 large eggs, room temperature
  • 4 cups water
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sugar
  • 2 stalks green onions, sliced
  • 1 teaspoon toasted sesame seeds (optional)

Instructions

  1. In a small bowl, whisk together half of the seasoning packet (about 1 tablespoon), 1 tablespoon soy sauce, 1 teaspoon sugar, and 1 teaspoon sesame oil. Set aside.
  2. Bring a medium pot of water to a boil. Gently lower eggs into the boiling water and boil for exactly 6.5 minutes.
  3. Prepare an ice bath. Transfer eggs to the ice bath immediately after boiling and let cool for at least 5 minutes.
  4. Using the same pot of boiling water, add the ramen noodle blocks and cook for 2-3 minutes until tender. Drain noodles, reserving 2 tablespoons of the starchy pasta water.
  5. In a small skillet over medium-low heat, melt the butter. Add minced garlic and cook for 1-2 minutes until fragrant and golden, being careful not to burn.
  6. Add the drained noodles to the skillet with the garlic butter. Pour in the prepared sauce and the reserved noodle water. Toss until the sauce is creamy and coats the noodles.
  7. Peel the cooled eggs and slice them in half lengthwise.
  8. Place the eggs on top of the noodles. Garnish with green onions and sesame seeds. Serve immediately.

Notes

Use half the seasoning packet to avoid excessive saltiness. The 6.5-minute egg boil is crucial for a jammy yolk; do not guess the time. Save the starchy noodle water to help emulsify the sauce. Garlic burns easily, so keep heat at medium-low and stir constantly. This recipe does not freeze well.
