  • 0.5 cup (120ml) orange liqueur (Triple Sec or Cointreau)
  • 0.25 cup (60ml) simple syrup (optional, adjust to taste)
  • Coarse kosher salt (for rimming glasses)
  • Lime wedges (for rimming and garnish)
  • Fresh strawberry slices (optional garnish)

Instructions

  1. Let frozen strawberries sit on the counter for 10-15 minutes to soften slightly, preventing blender damage.
  2. Rim margarita or highball glasses by running a lime wedge around the edge and dipping into coarse kosher salt. Set aside.
  3. Add frozen strawberries, tequila, lime juice, orange liqueur, and simple syrup to a high-speed blender.
  4. Blend on low speed to break up fruit, then increase to high. Blend for 30-60 seconds until smooth and slushy.
  5. Taste the mixture and adjust sweetness with more simple syrup or tartness with more lime juice if needed.
  6. Pour immediately into prepared glasses and serve.

Use frozen strawberries, not fresh, to ensure a thick texture that doesn’t water down. If using fresh strawberries, freeze them for at least 4 hours beforehand. For parties, you can make a batch ahead of time and store it in the freezer for 1-2 hours until slushy, then pour. Do not freeze solid. If the drink is too thick, add a splash of water or lime juice.
