Description
A refreshing, tart, and sweet summer drink made with fresh strawberries, lemons, and mint. This simple recipe takes only 5 minutes to prepare and can be served still or sparkling.

- 1 ½ cups fresh strawberries, hulled
- 3 medium fresh lemons (about ¾ cup juice)
- 1 large handful fresh mint leaves (15–20 leaves)
- ½ cup simple syrup (or ⅓ cup honey)
- 1 cup sparkling water (optional, for fizz)
- 2 cups ice (optional, for chilling)
Instructions
- Wash and hull the strawberries. If large, chop in half and toss into a blender.
- Cut lemons in half and squeeze to extract about ¾ cup of juice. Pour over strawberries in the blender.
- Tear mint leaves into smaller pieces to release oils and add to the blender along with the simple syrup (or honey). Add ice if desired.
- Blend on high for 30-45 seconds until completely smooth and vibrant pink.
- Taste the mixture and adjust sweetness with more syrup or tartness with more lemon juice if needed.
- Pour into glasses filled with ice. Top with sparkling water for a fizzy version.
- Garnish with a strawberry slice and a sprig of mint. Serve immediately.
Notes
Use cold ingredients for a colder drink. Do not over-blend the mint to avoid bitterness. The base can be made ahead and stored in the fridge for up to 2 days; add ice and sparkling water when serving. If using frozen strawberries, thaw slightly or reduce ice.
