Description

A refreshing, homemade iced tea made with fresh peach honey syrup, black tea, and fresh mint. This simple, healthy drink is ready in under 30 minutes and offers a natural energy boost without the crash of caffeine.


Ingredients

  • 3 medium fresh peaches, sliced (about 450g)
  • ½ cup honey
  • ½ cup water (for syrup)
  • 1 tablespoon lemon juice
  • 4 black tea bags (or 2 tablespoons loose leaf tea)
  • 4 cups water (for brewing tea)
  • 1 bunch fresh mint leaves (about 2025 leaves)
  • Ice cubes

Instructions

  1. Slice peaches in half, remove pits, and chop into rough chunks.
  2. In a small saucepan, combine peach chunks, honey, ½ cup water, and lemon juice.
  3. Heat over medium heat, stirring occasionally, until honey dissolves and mixture bubbles.
  4. Reduce heat to low and simmer for 5-7 minutes until peaches soften and release juices.
  5. Mash peaches slightly with a fork for a chunky consistency, then remove from heat and let cool completely.
  6. While syrup cools, bring 4 cups of water to a boil, then remove from heat.
  7. Add tea bags or loose leaf tea and steep for 3-5 minutes.
  8. Remove tea bags and let tea cool to room temperature.
  9. Strain the cooled peach syrup through a fine-mesh sieve into a bowl, pressing on solids to extract juice; discard solids.
  10. In a large pitcher, combine cooled tea and peach syrup, stirring well.
  11. Taste and adjust sweetness or strength by adding more syrup or tea as needed.
  12. Gently slap fresh mint leaves between hands to release oils, then add to pitcher.
  13. Fill glasses with ice cubes and pour tea over ice. Garnish with mint sprig and peach slice.

Notes

Use room temperature honey for easier mixing. Slapping the mint releases essential oils for better flavor. For less bitterness, cold-brew the tea in the fridge for 6-8 hours. Make peach ice cubes to prevent dilution. Store in the refrigerator for up to 5 days; strain mint after 2 days to prevent sogginess.
