A simple, stress-free dessert featuring juicy, spiced fresh peaches topped with tender, buttery biscuits. This recipe uses just a few pantry staples and takes about 10 minutes of prep time.
Ingredients
- 6–7 medium fresh peaches (about 3 lbs / 1.4 kg), peeled and sliced
- ½ cup granulated sugar (100g)
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 cup all-purpose flour (120g)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup unsalted butter (57g), melted
- ¼ cup milk (60ml)
- ½ teaspoon vanilla extract (optional)
- 1 tablespoon butter (for greasing the pan)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×9 inch baking dish with 1 tablespoon of butter.
- Blanch whole peaches in boiling water for 30-60 seconds, then transfer to an ice bath to cool. Peel off the skins, halve, pit, and slice the peaches into wedges.
- In a mixing bowl, toss the sliced peaches with granulated sugar, ground cinnamon, and lemon juice. Let sit for 10-15 minutes to draw out juices.
- Pour any accumulated peach juice into the prepared baking dish, then spread the peaches evenly in the dish.
- In a separate bowl, whisk together flour, baking powder, salt, and a pinch of sugar.
- In a small bowl, mix melted butter, milk, and vanilla extract (if using).
- Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix; the dough should be shaggy and sticky.
- Drop spoonfuls of biscuit dough directly on top of the peaches in the baking dish.
- Bake for 40-45 minutes until the topping is golden brown and the peach syrup is bubbling vigorously around the edges.
- Let cool for 10-15 minutes before serving to allow the syrup to thicken.
Notes
For best results, use ripe but firm peaches. Letting the sugared peaches rest is crucial for creating the syrup. Do not overmix the biscuit dough to ensure a tender texture. If the topping browns too quickly, cover loosely with foil for the last 10 minutes. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven.
